I had no idea making cheese is so dang complicated - hats of to ya!  I did have to Wiki GMO / non-GMO - sorry but you've got a newb listening to your podcast Tim and Liz!  Great podcast as usual!  Thanks for what you do - it is awesome to heat the experiences you have to offer.
