Has anyone delved into flash freezing? While thinking about better ways to freeze strawberries, I realized using a cryogen like liquid nitrogen would likely yield great results, increasing the quality of the stored product.  Obviously, there are logistic issues with obtaining, transporting and using liquid nitrogen, but there are dangers faced with using any tool.  Thanks in advance!

You can buy a flash freezer and they are not as expensive as one would think. The beauty of flash freezing is that it does not allow ice crystals to form in the product. They use a flash freezer for gelato ice cream precisely for that reason.
